Soup

Beef and lentil soup is a delicious meal to warm you up on a winter’s day. A rich and hearty soup full of healthy ingredients your family will enjoy. For a vegetarian option leave out the meat and beef bouillon cubes and add cubed tofu or tempeh and vegetable broth.

Ingredients

1 pound lean ground beef

1 quart water

1 cup dried lentils, rinsed

2 cups chopped cabbage

1 cup sliced carrots

1 cup sliced celery

1 cup chopped onion

1/2 cup diced green pepper

1/2 teaspoon pepper

1/2 teaspoon dried thyme

1 bay leaf

1 teaspoon salt (optional)

2 beef bouillon cubes

1 (10 ounce) package frozen chopped spinach, thawed

Instructions

Brown ground beef in large pot, drain off any fat. Add water and all ingredients except spinach. Bring to a boil, reduce heat and simmer uncovered for 1 to 1 1/2 hours or until the lentils and vegetables are tender. Add spinach and heat through. Remove bay leaf. Makes 6 servings.
